酒造用に栽培された「酒米」ではなく、私たちが毎日食事で食べている「飯米」で造った日本酒です。日本有数の豪雪地帯、十日町市。
越後妻有里山協働機構が耕作放棄地となった棚田を受け継ぎ生産した十日町産コシヒカリを、米の旨みを味わえる酵母で仕込みました。
自然に寄り添い、大地に耳を傾け育てた米を豪雪の雪解け水で醸した、無垢な酒。
その風味をそのまま味わっていただけるよう、濾過せず、原酒のまま瓶詰めしました。
酒粕の漬物や山菜の炒め煮など、自然に寄り添いながら暮らす人々によって育まれた越後妻有ならではの食文化や食材と合わせると、そのおいしさがさらに引き立ちます。
